Dungeness Crab Pot Pies

Okay, so I recently spent a few days down in California at my Dad’s place in San Luis Obispo. He had just recently undergone open heart surgery, and wanted me to play ‘Top Chef’ during his convalescent period.

dungeness-crab-pot-piesSince he’s a lover of Pacific NW seafood, I brought a few tasty ingredients with me on the plane – frozen cracked crab meat from Hood Canal, some of my homemade smoked salmon, and some frozen Razor Clams that we dug up early last Spring.

I had perfected my own personal recipe for Dungeness Crab Pot Pies a few weeks earlier, so I thought I would try them out on him. Here’s the recipe:

Pre-heat oven to 350 degrees.

1 lb. of Dungeness Crab Meat (or more if you’re a crabaholic like me!)

1 – 16oz. jar of creamy Alfredo sauce

1 cup of frozen fresh green peas

1 cup of baby carrots sliced

1 cup of sliced fresh mushrooms

1/4 cup of diced Walla Walla Sweet Onion

2 cloves of fresh garlic finely diced

1/4 teaspoon of cayenne pepper

1 package of pie crusts (usually comes in a 15oz. box w/ 2 rolled 9-in. crusts)

6 – 4in. diameter poreclin Ramekins

Combine all ingredients into a large mixing bowl. Roll out pie crust and use a ramekin to cut-out 6 pie tops. Puncture pie tops several times with fork. Spoon mixture liberally into each ramekin. Cover ramekins with pie tops. Place on cookie sheet and place into oven. Cook for 25-30 minutes.

Goes exceptionally well with a tossed Romaine salad, Sour Dough French Bread, and a glass of Pinot Grigio.

“Why my boat hasn’t got wet yet!”

Okay, so what’s wrong with this picture?

Crabbing-on-the-Hood-Canal-WAHere is it July 13th, and my boat (the ever-faithful 16 foot C-Dory Angler) hasn’t graced the waters of Puget Sound for the 2009 crabbing season!

Where the HECK are my priorities???

Normally by this time we’d have dropped and pulled our pots a half dozen times or so, porked out to our heart’s content, and started to replenish our our stock of frozen seal-a-meal bags.

But unfortunately, the opening of the recreational crabbing season has been delayed for Marine Zone 12 (Hood Canal), and doesn’t begin until July 29th.

Add to that the fact that I’ve been literally SWAMPED here of late working with 4 different Buyer clients. Luckily though, two of them should be under contract shortly, so I may finally have a few spare moments to run out and snag a few Dungies!

March Madness and Razor Clamming

Towards the end of this coming week, testosterone levels will be at an all time high as male bonding among the Jacobson men goes into full swing.

As former residents of Lawrence KS, we’re avid/diehard KU Jayhawk fans. On Selection Sunday our brackets were skillfully filled out and proudly displayed on the kitchen refrigerator. Currently, Luke is in the lead, followed closely by brother, Elliot. Mom and Dad take a distant 3rd way tie.

Kansas soundly defeated Dayton earlier today and will play Michigan State this coming Friday in the Sweet Sixteen. great white clam hunter

Early Saturday morning, we’ll drive out to the Washington Coast for one of several Razor Clam digs of the 2009 Spring season. It takes us about 2 1/2 hours to drive out on Hwy. 3 through Shelton, past Aberdeen & Hoquiam, and then on up to Copalis Beach. Four area beaches will be opened to harvesting on that morning, including Long Beach, Twin Harbors, Copalis, and Mocrocks. I prefer Copalis because you can drive your vehicle right onto the beach, park it, and walk just a short distance down to the surf.

 sadie the wonder dogNext to crabbing, I enjoy digging Razor Clams almost as much. It’s a great time for male bonding and experiencing the awesome, breathtaking scenery that comes from living here in the Pacific Northwest.

There’s a lot of work that goes into harvesting Razor Clams. Shoving the clam gun barrel deep into the sand quickly, then pulling it out under suction, uses muscles in your back that have been hibernating since high school.

Then, when you get your bounty home, the cleaning process takes nearly as long as the drive out to the beach! There’s a very methodical process to cleaning the clams, and the ‘EASY’ button doesn’t work! razor clamming on the wa state coast

But I tell ya, when you dip the clams in flour, egg, and cracker crumb, and fry those bad boys up, there is nothing better on the planet than eatin’ Razor Clams! They’re especially good reheated in the morning along with scrambled eggs.

Such are the rewards of living here on the Kitsap Peninsula WA – making your own smoked salmon, pulling up live Dungeness Crab from Hood Canal, digging Clams or Oysters, or picking blackberries for a freshly baked pie!
